Fluffy potatoes with deliciously browned, crisped skins. Slow cooker jacket potatoes is an incredibly simple way to make perfect baked potatoes to stuff with a delicious filling for a tasty lunch, or to accompany dinner.
Wash the potatoes, removing any sprouts, eyes or bruises then dry thoroughly.
Prick the potatoes a few times on each side with a fork or small sharp knife.
Line the bottom of the slow cooker with a piece of foil and then place the potatoes on top. Brush a little oil onto each potato and generously season with salt and pepper. Roll them over in the oil so they are all fully coated.
Take 4 sheets of kitchen roll leaving the joins of the sheets intact. Double over the length of kitchen roll and place over the top of the slow cooker pot. Secure this in place with lid then cook on high for 7 hours (see recipe note).
Notes
Different brands and sizes of slow cookers have differences in their heat output meaning some may take longer to cook food than others. Accordingly, please take recipe times stated as a guide.
The sides of the potato that crisp most are those that are in contact with the bottom of the slow cooker pot. For best results turn the potatoes over half way through cooking to crisp both sides.
It may be necessary to replace the kitchen paper part way through cooking, particularly if there are multiple potatoes in the pot as the volume of moisture will be increased.
