Slow Cooker Ratatouille

Slow cooking a Ratatouille gives the ingredients hours to fuse together!

Serves 6

Prep Time 15 minutes
Cooking Time about 6 hours on medium


  • 1 tbsp olive oil
  • 1 large onion
  • 1 clove garlic
  • 1 aubergine
  • 1 courgette (peeled)
  • 1 pepper any colour
  • 2 cans chopped tomatoes
  • 1 tbsp tomato puree
  • Mixed herbs
  • Pinch fresh thyme if available
  • Salt & pepper to taste
  • 1 tsp balsamic vinegar


  1. Peel and chop the onion, chop the aubergine and courgette into 1" chunks, chop the pepper into smallish chunks or slices.
  2. If you want to, fry the onion in the oil for a few minutes until see-through, otherwise, pre-heat the slow cooker for 10 mins on high, then add the oil and onion. Stir and leave for 10 mins, then add everything else, stir, turn down to low and cook for approx. 6 hours.
  3. Stir again, and eat with whatever you like!
