Slow Cooker Sweet Potato Soup

This Slow Cooker Sweet Potato Soup works brilliantly as a light snack or as part of a bigger meal, and can be easily frozen for later.

Cooking Time about 6 hours on low


  • 1.5kg sweet potato, chopped into 3cm chunks
  • 1 onion, chopped
  • 2 sticks celery, roughly chopped
  • 2 carrots, roughly chopped
  • 1 clove garlic, crushed
  • 1 litre chicken or vegetable stock
  • 200ml coconut milk
  • Salt and freshly ground pepper
  • 1 tbsp dried basil


  1. Place everything except the coconut milk into the slow cooker, and season with plenty of salt and pepper. Cover and cook for 6 hours.
  2. Once cooked, blend thoroughly with a hand blender. Add the coconut milk, stir well, and cook for another 30 minutes.
  3. Check the seasoning, and serve with a drizzle of coconut milk and a pinch of basil on top.
