This slow cooker Curried Carrot, Ginger and Orange soup is an amazing winter warmer, definitely guaranteed to bring a smile to your face on a cold Winter's day!
about 4 hours on high
8 carrots, peeled and chopped
1 onion, finely chopped
1 litre of vegetable stock
150ml of coconut milk
1 tsp mild curry powder
1/2 tsp fresh ginger, finely chopped
Salt for seasoning
Small sprig of coriander or parsley to serve
Throw everything into the slow cooker, and cook on high for 4 hours, or 8 on low if you're planning to leave it all day.
Once cooked, use a hand blender to blend all the chunks of veg into a puree. Be careful whilst the soup is still hot! Alternatively you can transfer it to a standard blender, but wait for it to cool before doing so.
