You often don't think of desserts when it comes to slow cooking, but these Slow Cooker Chocolate Brownies are a worthy candidate! Cook them and try not to scoff them before they cool...

Serves 8
Difficulty Easy
Prep Time 15 minutes
Cooking Time about 4 hours on low

  • 125g dark chocolate
  • 125g milk chocolate
  • 125g caster sugar
  • 125g chocolate chips
  • 160g plain flour
  • 100g chopped walnuts
  • 30g unsweetened cocoa powder
  • 60g unsalted butter, cubed
  • 1 tsp baking powder
  • 3 eggs, beaten
  • Pinch of salt

  1. Grease the inside of the slow cooker, and line the bottom with greaseproof paper - this will stop the brownie from sticking to the bottom of the slow cooker. Start by mixing together the flour, baking powder, cocoa and a pinch of salt in a bowl.
  2. In a separate bowl, melt the milk and dark chocolate along with the butter, stirring as you do so. Add the sugar and beaten eggs to the melted chocolate and stir well. Fold the flour mixture into the chocolate, and add the walnuts and chocolate chips.
  3. Transfer the mixture to the slow cooker, cover, and cook on low for 3.5 hours. Put a piece of kitchen roll under the lid to prevent condensation dripping onto your brownie. After the cooking time, if the brownie is still too soft cook with the lid off for a further 30 minutes.
  4. Transfer to a rack and slice once cooled.

Just taken my first brownie batch out of the slow cooker and it seems a bit dry? I did add some water in the mix. Should I have put in more! It smells amazing though, just not fudgy enough for my liking!
