Veggies Serves: 6 Ingredients
PreparationPeel and chop the onion, chop the aubergine and courgette into 1" chunks, chop the pepper into smallish chunks or slices. If you want to, fry the onion in the oil for a few minutes until see-through, otherwise, pre-heat the slow cooker for 10 mins on High, then add the oil and onion. Stir and leave for 10 mins, then add everything else, stir, turn down t o Low and cook for approx. 6 hours. Stir again, eat with whatever you like.
NotesI make smallish portions as a side dish, but also whizz up a portion with the stick blender and use as a pasta sauce for the children (who don't realise they're eating lots of veggies this way!). You can add things like green beans or runners about 20 minutes before the end of cooking too.
