Ratatouille Slow Cooker Way

Serves: 6

Ingredients

  • 1 tbsp olive oil
  • 1 large onion
  • 1 clove garlic
  • 1 aubergine
  • 1 courgette (peeled)
  • 1 pepper any colour
  • 2 cans chopped tomatoes
  • 1 tbsp tomato puree
  • mixed herbs
  • pinch fresh thyme if available
  • salt & pepper to taste
  • 1 tsp balsamic vinegar

 

Preparation

Peel and chop the onion, chop the aubergine and courgette into 1" chunks, chop the pepper into smallish chunks or slices. If you want to, fry the onion in the oil for a few minutes until see-through, otherwise, pre-heat the slow cooker for 10 mins on High, then add the oil and onion. Stir and leave for 10 mins, then add everything else, stir, turn down t o Low and cook for approx. 6 hours. Stir again, eat with whatever you like.

 

Notes

I make smallish portions as a side dish, but also whizz up a portion with the stick blender and use as a pasta sauce for the children (who don't realise they're eating lots of veggies this way!). You can add things like green beans or runners about 20 minutes before the end of cooking too.

Just found this site, looks great! good idea with the pasta sauce, good for kids and big kids alike. Also good for using up leftovers from fridge
