Slow Cooker Carrot and Ginger Soup

This slow cooker Curried Carrot, Ginger and Orange soup is an amazing winter warmer, definitely guaranteed to bring a smile to your face on a cold Winter's day!

Serves 4
Difficulty Easy
Prep Time 15 minutes
Cooking Time about 4 hours on high

Ingredients

  • 8 carrots, peeled and chopped
  • 1 onion, finely chopped
  • 1 litre of vegetable stock
  • 150ml of coconut milk
  • 1 tsp mild curry powder
  • 1/2 tsp fresh ginger, finely chopped
  • Salt for seasoning
  • Small sprig of coriander or parsley to serve

Method

  1. Throw everything into the slow cooker, and cook on high for 4 hours, or 8 on low if you're planning to leave it all day.
  2. Once cooked, use a hand blender to blend all the chunks of veg into a puree. Be careful whilst the soup is still hot! Alternatively you can transfer it to a standard blender, but wait for it to cool before doing so.
