Gammon With Cider Glaze

This requires a little more work than your average slow cooker receipe, but is more than worth it!

Serves: 8

Ingredients

  • 2kg gammon joint (soaked overnight if smoked)
  • 2 small onions
  • 30 cloves
  • 3 bay leaves
  • 10 black peppercorns
  • 150ml dry cider

 

Preparation

The Gammon
Stud the onions with 8 of the cloves (4 per onion) and add to the pot along with the gammon (drained if using smoked gammon), bay leaves and remaining peppercorns.

Pour over enough cold water to cover and cover with the lid. Cook on high for 1 hour and spoon off any scum that forms. Cook for a further 4 to 5 hours.

Next, lift the gammon out of the pan and place on an ovenproof dish to rest for 15 minutes.

The Glaze
Put the cider in a small pan along with the sugar. Heat it gently until the sugar dissolves, then simmer for 5 - 10 minutes. Remove from the heat and it will thicken slightly.

Finally.... 
Preheat the oven to 200C. Cut off the rind from the gammon leaving a layer of fat. Score the fat into a nice criss cross pattern, and pour over the glaze.

Bake in the oven for about 25 minutes until the fat turns crispy.

 

Notes

For the classic British meal, serve with chunky chips and an egg. :-)
