Slow Cooker Beef Ragu

A Slow Cooker Beef Ragu is possibly one of the easiest recipes you can try in a slow cooker, and will definitely make it into your list of things to make again...and again!

Ingredients

  • 1kg beef chuck or blade
  • 1 onion, sliced
  • 400g can chopped tomatoes
  • 4 garlic cloves, peeled
  • Few sprigs of fresh rosemary
  • 4 tbsp tomato paste
  • 50ml red wine
  • 450ml beef stock
  • 1 tbsp flour
  • Salt and pepper to season
  • 350g rigatoni, to serve
  • Grated parmesan, to serve

Method

  1. Turn the slow cooker on high. Create a bed of onion in the bottom of the slow cooker, chuck in the garlic cloves, then sprinkle the rosemary over the top.
  2. Season your beef well with salt and pepper (it'll taste rubbish if you scrimp here, trust us on this!), and place it in the slow cooker.
  3. In a bowl, combine the flour and tomato paste, then add the red wine, and beef stock and pour the mixture into the slow cooker.
  4. Add the can of chopped tomatoes into the slow cooker, then cover and cook on high for 5-6 hours. If you want to extend the cooking time use a lower setting and extend the time accordingly.
  5. Once cooked, you should be able to pull the beef apart easily with a pair of forks.
  6. Serve with rigatoni, and top with plenty of Parmesan cheese!
