This is my adapation of a normal chili receipe that seems to work really well in a slow cooker, this is by far and away my favourite recipe I've discovered so far!

Serves: 4

 

Ingredients

  • 2 tbsp Olive Oil
  • 2 large onions or 4 banana shallots, chopped
  • 2 garlic cloves, finely chopped
  • 1 green pepper, deseeded and chopped
  • 500g of minced beef
  • 1 can of chopped tomatoes
  • 2 fresh tomatoes, chopped
  • 1 1/2 tsp Chili Powder
  • 1 1/2 tbsp Flour
  • 1 1/2 tsp Brown Sugar
  • 4 tbsp Tomato Puree
  • Sea Salt and Freshly Ground Black Pepper
  • 1 Can of Red Kidney Beans, drained
  • 1 bay leaf
  • 2 sprigs of thyme, leaves picked and roughly chopped
  • Handful of chives, chopped
  • 200ml soured cream

 

Preparation

Fry the onions, garlic and green pepper in a pan until soft, then Add the minced beef and fry until lightly browned. Blend together the chili powder, flour, brown sugar, and tomato puree to make a paste. Stir the paste, canned and fresh tomatoes, thyme and seasoning into the pan. Stick all the ingredients into the slow cooker and cook for 3 - 7 hours dependant on heat setting. One hour before serving add the kidney beans.

Mix the chopped chives into the soured cream to give to the panzies that don't enjoy a hot chili! :-)

 

Notes

Serve with rice, jacket potatoes or tortilla chips (my favourite!).

Added a teaspoon of dried chili flakes as a test and it was just a touch too hot...perhaps wil ltry 1/2 tsp next time.

tried this last night for firework party, it is the best chilli i've ever made and went down very well with everyone. I added a pinch of dried chilli flakes and it was just right.

Why not put whole hot chillies in? That way the people that like very hot chilli (like me) can have their hit as well as those that prefer a mild mix. I also put a couple of hot chillies into the rice cooker, with the rice. I makes plain boiled rice a bit more interesting
